These spicy peanut noodles are the perfect balance of sweet, nutty, savory, and spicy, with a delicious blend of peanut butter and soy sauce, and gochujang.

These spicy peanut noodles are the perfect combination of spicy, sweet, and salty, with the use of gochujang, peanut butter, and soy sauce.
Tossed with veggies like snap peas and carrots and crunchy peanuts, it can serve as your side dish, or add some protein (tofu, chicken, or shrimp,) and make it the main course!
Whether you’re a spicy food fanatic, or just looking for a new twist on classic noodles, these spicy peanut noodles are sure to become a new favorite in your kitchen.
Ingredients for spicy peanut noodles
For sauce:
- Creamy peanut butter – This will thicken the sauce and add a slight sweetness and nutty flavor.
- Soy sauce – Soy sauce will add the perfect amount of saltiness and umami.
- Water – Water will help thin the sauce and coat our noodles and veggies.
- Rice vinegar – Rice vinegar will add a slight tanginess and brightness to the sauce.
- Sriracha or gochujang – Either sriracha or gochujang will work well in this sauce to give it a spicy kick!
For noodles:
- Chow mein or rice noodles – Feel free to use your favorite in this dish.
- Sesame oil – Sesame oil will give a nice nutty flavor to the noodles.
- Veggies – I’ve used carrots and snap peas here for their crunchiness.
- Ginger – Ginger will add sweetness and a slight spice.
- Garlic – Garlic is a classic ingredient that will add earthiness to the dish.
- Green onion – Green onion will give our noodles a mild onion flavor.
- Sesame seeds and chopped peanuts – For extra added crunch and flavor, sesame seeds and chopped peanuts are perfect!
What is gochujang?
Gochujang is a spicy chili paste used in many Korean dishes.
It’s made from gochu-garu (Korean chili flakes,) glutinous rice, and fermented soybean powder.
It is sweet, spicy, and savory!
You can easily find gochujang at any Asian market, in the international foods aisle at most major grocery stores, or online.
Additional protein
Feel free to bulk up this recipe with some protein! Here are some great options:
- Sliced chicken (take some help from the grocery store and get the premade rotisserie chickens from the deli section)
- Shrimp
- Tofu
Storage and leftovers
For any leftover spicy peanut noodles, put them in an airtight container and store them in the fridge for up to 3 days.
To reheat, simply place them in a microwave-safe dish covered loosely with a damp paper towel and heat for 2-3 minutes or until heated thoroughly.

Spicy Peanut Noodles

Ingredients
For sauce:
- 1/3 cup creamy peanut butter
- 1/4 cup soy sauce
- 1/4 cup water
- 1 tablespoon rice vinegar
- 2 tablespoons sriracha or gochujang or to taste
For noodles:
- 8 ounces thin asian noodles chow mein or rice noodles
- 2 tablespoons sesame oil
- 1 cup diced carrot
- 1 cup snap peas halved
- 1 teaspoon grated garlic
- 1 teaspoon grated ginger
- 1/4 cup sliced green onion
- Sesame seeds for topping
- Chopped peanuts for topping
Instructions
For the Sauce
Add all of the ingredients to a large microwave-safe bowl and heat for 45 seconds.
Whisk the sauce together until well combined and then set it aside until ready to use.
For the Noodles
Bring a large pot of water to a boil and cook the noodles according to the package directions. When the noodles are ready, drain them and run them under cool water just until they are no longer steaming. They will still be warm, and that’s okay.
Transfer the noodles to the bowl with the sauce and toss to combine.
Heat a small skillet over medium-high heat and add the sesame oil.
When the oil is fragrant, add the diced carrot.
Saute the carrots for 4-5 minutes, or until they are your desired crispness.
Add the snap peas, garlic, and ginger and cook for an additional minute.
Add the vegetables to the bowl with the noodles and toss to combine.
Serve with sliced green onion on top.
Garnish with sesame seeds and chopped peanuts, if desired.
