Years ago before we had kids, my hubby and I enjoyed an incredible vacation to Hawaii. That’s when I fell in love with macadamia nuts, especially chocolate covered ones. Of course, they are not keto-friendly.

I decided to create a sugar-free chocolate macadamia nut clusters recipe. I wanted something easy that I could whip up in no time. This recipe is great because it has only three ingredients. No need to cover your kitchen counter with items such as cocoa powder and baking powder. No need to preheat your oven as you will only use your microwave for this recipe. All you need is Lily’s sugar-free chocolate, coconut oil, and macadamia nuts. It is so easy that your younger kids can even help. Keto Chocolate Macadamia Nut Bites will become a favorite treat!

What Kind of Chocolate is Keto?

Chocolate sweetened with keto-friendly sweeteners like the candy bar used in this recipe for Keto Chocolate Macadamia Nut Bites is considered keto-friendly. However, not all commercial sugar-free chocolate is considered keto-friendlyas some contain sweeteners that have been proven to spike blood sugar levels. It’s also important to keep in mind that some sugar-free chocolates have ingredients that can cause tummy troubles or digestive distress. This warning is often listed on the packaging.

Keto Chocolate Macadamia Nut Bites are made with Lily’s Creamy Milk Chocolate bar. This sugar-free bar is botanically sweetened with Stevia and Erythritol, which is a sugar alcohol. It is made with non-GMO ingredients and is gluten-free. While milk chocolate is my favorite, if you prefer, you can use dark chocolate or Lily’s Chocolate Chips in this recipe.

How to Melt Chocolate in the Microwave for Keto Chocolate Macadamia Nut Bites:

You don’t want the chocolate to seize (or to scorch), so it’s important to melt it carefully.

  • All utensils and bowls should be dry and free of moisture. Do not use wooden spoons as they may have moisture in them.
  • Use a glass bowl that is greased.
  • Make sure chocolate is broken into small, equally sized pieces.
  • Microwave the chocolate in short intervals and stir in between. Do not cover with a lid as it will cause steam to be trapped, which introduces moisture in the chocolate. Moisture of any kind will cause the chocolate not to melt properly.
  • The chocolate will begin to get shiny as it melts and will continue to melt after you take it out of the microwave. That is why it is crucial to microwave in intervals as you don’t want to microwave it until it looks smooth, as it will overcook. As you stir the chocolate, it will continue to melt and will require less heating.

Instructions

  • Grease a small glass bowl and cover a cookie sheet with parchment paper.

  • Tear Lily's Creamy Milk Chocolate candy bar into squares and add to the bowl with 1 tbsp coconut oil.

  • Microwave in 20-second intervals stirring between until the candy bar melts. Make sure to stir each time before heating again. Be careful not to heat too much, or the chocolate will seize.

  • Once the chocolate is melted and smooth, add the macadamia nuts and stir until they are coated with the melted chocolate.

  • With a small cookie scoop, make bite-size clusters and place on parchment paper.

  • Place cookie sheet in fridge until the Keto Chocolate Macadamia Nut Bites set up.

Notes

The sugar alcohols in the Lily's Creamy Milk Chocolate Bar are not included in the nutritional information since most subtract to calculate net carbs.
