- Coat the shrimp with cornstarch and shake off any extra.
- Fry the shrimp in small batches for 2 to 3 minutes, or until they are golden brown. Drain the meat on a wire rack until it's time to serve.

- Heat the wine, vinegar, and chopped onion in a heavy-bottomed skillet over medium heat until the liquid is reduced to about 1 tablespoon.
- Add the small pieces of butter and stir until it melts.
